Symphony and CLI Vs Plain PHP via FTP

Hello, I have been developing using PHP for quite a while and my normal procedure for a development environment is MAMP and production is a Rackspace Cloud Server. I rely on FTP for everything and write all of my own PHP therefore the move to a framework is very confusing. I have not had to rely on dependencies for anything (which makes Composer confusing). I am on Mac with OSX 10.6.8 and am having a difficult time installing Symphony locally and within MAMP. Can anyone explain the major differences in developing and deploying via FTP vs. relying on command line interface (in using Symphony)? And does anyone have any good resources for making the switch? Thanks!
